Pazo de Valdomiño, Ginabelle's responsible distillery, sinks its roots in the work of the great-great-grandfather of the current owners. Both the mirabeles and the Albariño grape used in the production of this distillate come from their own plantations.

Development
GINABELLE gin is made from distilled mirabeles plums and albariño wine lees. The result is a surprising and distinct gin, the result of nine distillations assembled with water from springs of the Serra do Argallo and with the touch of 5 botanicals (among them, the tojo flower).
Tasting
The mirabel distillate brings warmth, hints of pepper and fruity character. The second ingredient, Albariño wine, adds freshness and structure. Finally, the botanical touch comes from juniper, lemon peel, liquorice, coriander and tojo flower. This local botanist so common in Galicia is responsible for the notes of cocoa and honeysuckle that enhance the notes of pepper of the mirabeles and the subtlety of the Albariño grape.
Consumption
It is recommended to take it accompanied by tonic and seasoned with white grapes and thin plum slices.
